Let’s get one thing out of the way from the start: I love<\/i> ratatouille! It takes a little while to make, though using a pressure cooker does cut that time down a bit. But summer in the desert is no time to be really excited about standing over a hot stove, so I don’t make ratatouille as often as I might, and summer is when all of the vegetables for it are in season. <\/g><\/div>\n

However, a few days ago I just couldn’t stand it any longer and made a batch of the yummy stuff. Naturally, the two of us can’t really eat an entire batch (and it’s not worth making half a batch), but the leftovers are wonderful in a tarte \u00e0 la ratatouille<\/i>, or ratatouille pie.
