It takes a little while to make, though using a pressure cooker does cut that time down a bit. But summer in the desert is no time to be really excited about standing over a hot stove, so I don&#8217;t make ratatouille as often as I might, and summer is when all of the vegetables for it are in season. <g><\/g><\/div>\n<p><\/p>\n<div style=\"clear: both; text-align: center;\"><a href=\"https:\/\/i0.wp.com\/sandymike.net\/blog\/wp-content\/uploads\/2011\/07\/IMG_3589.jpg\" style=\"clear: left; float: left; margin-bottom: 1em; margin-right: 1em;\" target=\"_blank\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" border=\"0\" height=\"150\" src=\"https:\/\/i0.wp.com\/sandymike.net\/blog\/wp-content\/uploads\/2011\/07\/IMG_3589-300x225.jpg?resize=200%2C150\" width=\"200\" \/><\/a><\/div>\n<div style=\"text-align: left;\">However, a few days ago I just couldn&#8217;t stand it any longer and made a batch of the yummy stuff. Naturally, the two of us can&#8217;t really eat an entire batch (and it&#8217;s not worth making half a batch), but the leftovers are wonderful in a <i>tarte \u00e0 la ratatouille<\/i>, or ratatouille pie.
